Dr. Owen McDougal is a natural product chemist and director of the Food and Dairy Innovation Center at Boise State University. His lab performs quantitative and qualitative analysis of components present in agricultural and dairy products using a variety of scientific instrumentation and methods including Kjeldahl, high performance liquid chromatography, mass spectrometry, nuclear magnetic resonance spectroscopy, circular dichroism, UV-vis, infrared spectroscopy, chemometric software development, and basic food testing for fat content, carbohydrates, proteins, vitamins and minerals. Ongoing projects in the lab include method development of optical spectroscopy techniques that complement the Kjeldahl method of protein analysis, dairy protein chromatographic separation and purity assessment, potato protein ingredients, barley germination, wine production, potato chip processing, pulsed electric field application, extruder technology, and drug development.
